I’m thrilled to announce that salad season is here! While I enjoy salads all year, the ingredients do change with the seasons. In the cooler months, I like salads with lots of roasted veggies, and in the warmer months, I opt for more fresh, raw salads. Regardless of the ingredients, the dressing is always the star of the show, wouldn’t you agree?
This creamy and satisfying salad dressing features a magical ingredient—hummus. If you thought hummus was just for dipping veggies or crackers, think again! It adds a richness and creaminess that’s usually hard to achieve without yogurt or heavy cream, and it’s completely dairy-free. Although I’m not against dairy, I tend to eat very little of it since it’s better for my digestion and skin.
If you’d like to make your own hummus, go for it! But no worries if you prefer to grab your favorite store-bought version to whip up this dressing. It adds a touch of pizzazz (yep, I said pizzazz, even in 2023) to any salad that might otherwise seem bland!
This dressing also makes your salad much more satisfying, thanks to the protein, healthy fats, and fiber found in hummus, keeping you fuller for longer.
I’ve created three different hummus salad recipes for you to try, each yielding two servings. Feel free to double or triple the recipes as needed. First up is the vibrant Beet Hummus Dressing, packed with flavor, color, and nutrients.
*Serves 2. Feel free to make your own hummus from scratch by searching “beet dip” on the blog.*
Next, we have a Simple Hummus Dressing. The dijon mustard and apple cider vinegar add a tangy kick, plus you get the gut-friendly benefits of using fermented foods like ACV. I used this dressing on the delicious salad pictured below, and we make it all the time! It’s also great as a dip or sauce for a variety of dishes, from falafels to burgers.
*Serves 2.*
Finally, there’s the Garlic + Herb Hummus Dressing. It’s especially tasty if you have fresh herbs from your garden. I’ve just started my herb garden, so I’ve been using dried Italian herbs, and it’s still delicious!
*Serves 2.*
In case you’re wondering, when I don’t make hummus myself, I buy Sunflower Kitchen’s brand. It’s clean, free from canola oil (which I avoid), and super tasty. I’ve realized I need to post a plain hummus recipe on the blog since it’s so easy to make and much more affordable than store-bought. Plus, you control the ingredients!
I hope these creamy and delicious salad dressings inspire you to enjoy more salads in the coming weeks!
