Mason Jar Granola Breakfast Recipe

Hello, joyful readers, and happy Friday!

I’m still a big fan of mason jars. Did you have a chance to try my last recipe, the Mason Jar Quinoa Salad? If you did, I’d love to hear your thoughts!

Mason jars are convenient, eco-friendly, and just the right size for this granola breakfast. This is the kind of breakfast you’ll truly appreciate during a hectic week! Instead of skipping breakfast, which can spike your insulin levels and impact your blood sugar (leading to cravings and mood swings), prepare this the night before or in the morning, and bring it with you to work.

When I have this for breakfast, I feel balanced and my blood sugar stays stable, leaving me content the whole morning.

Here’s how to make it:
Instructions for one serving:

1. Grab your favorite glass jar and start layering. Place some dark berries at the bottom; I used about 1/3 cup of organic frozen raspberries.
2. Add 1/4-1/2 cup of your choice of yogurt—sheep, goat, or coconut milk yogurt works great.
3. Top it with 1/4-1/2 cup of your favorite granola; I used Steph’s Super Granola.
4. Add half a chopped banana.
5. Sprinkle 1 tablespoon of sprouted chia seeds.
6. Optional: Mix 2 tablespoons of your preferred protein powder into the yogurt.

And you’re done! I use frozen fruit at the bottom to keep the yogurt cool. You can prep these the night before and store them in the fridge, or make them in the morning and enjoy them 1-2 hours later. They’re perfect to carry in your bag for a short while. And no, the granola doesn’t get soggy in that time. If you’re concerned, just pack the granola separately and add it later.
