I love how simple this salad bowl is because it’s packed with delicious veggies! I purposely left out leafy greens since I made this just for my daughter, Vienna, using all her favorite vegetables.

I usually whip up this salad on weekends so I have a quick and healthy lunch option ready to go during the week. It serves 4-6 people.

Important Note:
Always use organic chickpeas, whether dried or canned. Non-organic ones might be contaminated with glyphosate, the main ingredient in Round-Up, which the World Health Organization considers a probable carcinogen. You might have heard about the 2018 report on high glyphosate levels in some popular hummus brands.

When I buy hummus, I go for the organic Sunflower Kitchen Hummus, especially because my daughter loves it so much! Alternatively, you can make your own hummus with organic chickpeas.

To keep herbs fresh, cut the bottoms off and place them in a mason jar with water in the fridge, like cut flowers.
