When peaches are in season, their juicy sweetness is absolutely magical! I almost wanted to name this salad “juicy” Peach and Arugula Salad, but realized I’ve already been using “juicy” quite a bit in my recent posts, like the Juicy Veggie Pasta Salad and the Juicy & Crunchy Kale Salad. Don’t you just love biting into a peach and feeling the juice run down your chin? I absolutely do!

Now that I’m back from Austria, I’m diving right back into cooking and baking, which is why I’ve shared this peach-inspired recipe. I’ve got another peachy treat coming in a couple of days too! If you’re familiar with some of my go-to recipes, you might guess what my next peach dish will be. Can you?

During our month away, I really missed my kitchen and our local farmer’s market—even though we visited plenty of markets in Austria. My father-in-law actually lives just 10 minutes from a market that’s open all week! Being back home, we’re dining at home more often, which makes me really happy!

As for this delightful recipe, the ingredients are incredibly simple – you might already have them at home. I prefer to keep my salads uncomplicated. As I was making this, I pondered whether to add some shredded carrots or perhaps yellow or orange sweet pepper. Feel free to add those if you’d like, but it’s the simplicity that truly makes this salad shine!

If possible, I suggest purchasing organic peaches because they’re typically quite sprayed with pesticides and rank #7 on the Dirty Dozen list. This is especially important if you have young ones at home, as they’re more vulnerable to the negative effects of pesticides due to their lower body weight, which can impact their microbiome. If your peaches aren’t ripe yet, don’t worry – I’ve included some handy tips for ripening them.

The dressing, like the salad, is simple yet memorable, flavorful, and delicious! The secret to a good dressing is ensuring it emulsifies well, so use a wire whisk to mix it up. Taste it as you go. If you like a tangier dressing, add a bit more apple cider vinegar. Prefer it sweeter? Just add more honey.

This Peach Arugula Salad is bright, fresh, and very juicy, thanks to the dressing and peaches. If you happen to try this salad when peaches are out of season, no worries! It’s just as delicious using pears instead.

Here’s the recipe! It serves 4-6 people. We enjoyed it with some sourdough bread, hummus, and olives for a tasty lunch. It could also make a lovely side dish for dinner with my Salmon Quinoa Cakes from Joyous Detox or my Orange Mint Salmon.
