JUMP TO RECIPE
A few years ago, I went to Mexico with my girlfriend Elaine for a yoga retreat, and I still vividly remember the delightful taste and aroma of the refreshing drink that welcomed us at the eco-resort. It was so amazing, I decided to feature it in The Joyous Cookbook!
I’ve given this Avocado Lime Refresher an upgrade! I’ve adapted the original recipe to include collagen, adding a boost of skin-loving benefits. (Check out my discount code at the end.)
Collagen is backed by research for its skin benefits, from enhancing hydration to helping maintain a youthful look. I even address its merits in this video: Is collagen worth the hype?
Now, let’s focus on this deliciously hydrating drink, perfect for quenching thirst and nourishing your skin. It serves 8, so you might want to make a double batch since everyone will be asking for more!
This drink is ideal for…

Serves 8
Pair it with the Everything Guac or the Sweet Pea Mint Dip. Cheers to a refreshing sip!
Which stevia brand did you use in the video?
What’s the stevia brand in this recipe? You mentioned it doesn’t have an aftertaste.
Also, how long will it stay fresh if I’m the only one drinking it?
I used the Better Stevia brand – no aftertaste!
How long will it stay fresh?
I’d recommend drinking it within a day, especially since it has avocado.
What coconut water brand do you use?
I’m not picky about brands, just make sure it’s pure coconut water and organic.
Made this yesterday, and it’s delicious! My blender only held 4 cups, so it was more concentrated but still amazing. This will definitely be on repeat this summer!
Glad you loved it, Courtney!
Delicious drink.
Yummm—what stevia brand did you use?
I’ve tried both Sweet Leaf and Now Foods. Both are great!
Love it! Simple and delicious. I make it with a bit less coconut water and more ice for a stronger flavor. Perfect for summer!
Awesome! It’s the perfect summer treat!
What stevia brand did you use in the recipe?
Better Stevia or Now are both excellent. I also love monk fruit; Lakanto makes a great monk fruit and erythritol blend. Hope that helps!
