Just don’t go overboard with the dressing, and you’ll have a fantastic main dish that won’t weigh you down for any summer activities. This salad is incredibly tasty, packed with fiber, protein, and a satisfying crunch. We’re currently in Austria, and the other week my husband made this salad for lunch. We’ve now had it at least 3-4 times for either lunch or dinner because it’s so filling and flavorful. I just knew it had to be shared on the blog! Since we hardly use the oven while we’re here, having canned tuna and chickpeas on hand was really handy.
As you can see, this salad takes advantage of summer’s fresh produce, but it’s something you can prepare any time of the year.
