Colorful Vegetable Stir Fry

Wow, this dish was so delicious and incredibly easy to make! I was thrilled when both my daughter and husband devoured it and even asked for seconds. Especially my daughter Vienna – convincing her to eat all these veggies was a big achievement since she usually only likes sweet potatoes, cauliflower, and broccoli.

True to its name, this recipe is bursting with vibrant vegetables, like purple cabbage, sweet red peppers, and greens, along with the delightful crunch of sugar snap peas. These veggies are rich in phytonutrients, which support gut health and overall well-being.

You can whip up this simple, colorful stir-fry and have dinner ready in less than 20 minutes! The sauce ingredients are kitchen staples for me: tamari, sesame oil, maple syrup, garlic, ginger, and some kind of nut or seed butter. If you don’t already have these ingredients, I highly recommend stocking up so you can try my Veggie Stir Fry with Tempeh from The Joyous Cookbook, this Maple Tempeh Tamari, or Rachel’s Pad Thai with Spiralized Sweet Potato – they’re all delicious!

This meal is quick, easy, and ticks all the boxes!

All the veggies cook in a flash, with the only wait time being for the noodles. Once they’re cooked, simply add them to the veggies, mix in the sauce, and VOILA – dinner is served! I always add the snap peas last to keep them crunchy and prevent overcooking. This quick cooking method also helps preserve most of the vitamin C, which is essential for a strong immune system.

Serves 4 *Option: Use 10 drops of stevia and 1/4 cup water instead of maple syrup

Delicious and super quick, even for someone like me who’s not very skilled in the kitchen! I was curious about this recipe since it uses ingredients I don’t eat often but probably should. I’m always on the lookout for quick, easy one-pot meals, and this one fits the bill perfectly. It’s tasty and definitely one I’ll make again!
