Everybody in my family loves cookies. Honestly, who doesn’t like cookies? You might not consider yourself a cookie enthusiast, but maybe you’re thinking about whipping up some quick and wholesome cookies for someone special. Well, I’ve got a fantastic recipe just for you!

These Banana Bread Cookies couldn’t be simpler. They’re made with basic, wholesome ingredients that are easy enough for a second grader to handle (my daughter, who is in second grade, makes them with my help). They taste just like banana bread but in cookie form!

Feel free to get creative with this recipe—it’s a perfect base for adding your favorite extras like pumpkin seeds, cinnamon, nutmeg, or dried cranberries. The cookies are soft and chewy, and the chocolate chips melt delightfully in your mouth.

Should I use less than 3 cups of oat flour if I’m not using whole oats processed in a food processor?

Indeed, you might want to use a bit less. I haven’t tested it with oat flour, which is much finer, so I can’t say for sure. Maybe start with 2.5 cups of oat flour and see how you like the texture.
