I’ve been eagerly waiting for weeks for the local corn to be ready because this salad has been on my mind. After coming back from vacation, I did a big grocery run and was thrilled to find a huge box of fresh, local “peaches and cream” corn at the health food store.

This salad is absolutely delicious! I’ll definitely make it again while fresh corn is in season. I added the chickpeas, and the cayenne pepper gave it a delightful hint of spice. (I used only about 1/2 tsp.) Such a wonderful meal!

I love this salad but usually end up using frozen organic corn because fresh organic corn is hard to find. Any tips on where to find some in Toronto?
Organic local corn in Ontario won’t be available for a little while, but non-organic options are out there. Corn on the cob is not GMO, only the corn used for animal feed is. I’ve seen corn on the cob at grocery stores, and it’s likely from further south.
