Delightfully Creamy Kale Salad

This Creamy & Dreamy Kale Salad is the perfect choice for when you want a meal that feels nourishing after a week of indulgence. Instead of restricting yourself, which usually doesn’t work, it’s better to enjoy meals that support your body and make you feel good. That’s exactly what this salad does—it helps you reset after heavy meals. I’m a year-round salad lover, no matter the season, and this particular one is perfect for winter. With ingredients like almonds, kale, and currants, it offers a comforting balance to the lighter apple, red pepper, and carrots.

The real magic comes from the dressing, which I’ll explain shortly. It’s what gives the salad its creamy, dreamy quality, making it deeply satisfying and nurturing for your body. I choose curly kale for its texture since it holds up well overnight, allowing you to enjoy leftovers without soggy greens, unlike spinach or romaine lettuce. Kale’s texture is fantastic, but it requires some preparation. As I demonstrated in a past video with my husband Walker, massaging kale is key.

To massage kale, simply drizzle a bit of olive oil and sprinkle a pinch of sea salt on the chopped leaves, then work it with your hands, but don’t overdo it unless you’re planning to eat it all in one go.

Now, let’s talk about the simple yet delicious dressing. It’s straightforward and satisfying, requiring just high-quality tahini, olive oil, lemons, garlic, and sea salt. I prefer tahini from a Middle Eastern store, and yes, I buy it from there because that’s where I find my favorite brand—Alkanator.

Like many salads I share, this one involves easy chopping, a few drizzles, mixing, and taking a bite to experience pure joy! I may sound enthusiastic, but I truly love this salad, much like my Juicy & Crunchy Kale Salad. These tartines are among my favorite recipes. Feel free to substitute green beans for asparagus if asparagus isn’t available, or consider using frozen.

I often make extra dressing to have enough for leftovers, and it’s great as a dip for crunchy veggies too!
