Mushroom enthusiasts, rejoice! Your day is about to get a whole lot better with this simple and delicious side dish or main meal. Perfect for breakfast with an egg on top, this dish is a delightful treat you won’t forget.
The earthy mushrooms are perfectly complemented by the salty tamari and sweet maple syrup, making this dish absolutely mouthwatering.
The Wild Mushroom Tartine is loaded with both fresh and dried mushrooms, which are great for your immune system. Dried mushrooms are extremely convenient since they have a long shelf life—just soak them in water to rehydrate! While it’s easier to find wild mushrooms dried than fresh, you can also use cremini or white button mushrooms for a simpler version.
The bread is just as important as the mushrooms here. I used fermented sourdough Stonemill Sprouted 3 Grains because it contains no artificial ingredients, which I love. Plus, it’s perfect for this tartine!
Here’s the recipe:
Serves 2 as a main dish or 4 as a side. It’s best enjoyed hot, so dive in as soon as it’s ready. Trust me, it’s so flavorful you’ll love it! Try serving it with a poached egg for breakfast. Keeping it vegan? Use cashew cheese instead of goat feta. The cheese adds a nice balance to the tamari and balsamic vinegar.
If you have leftovers, it’s best to refrigerate them for just a day. Honestly, it’s so tasty you might not have any leftovers! And if you have extra dried wild mushrooms, they’re perfect for making Wild Mushroom Soup—hearty, creamy, and satisfying.
Here’s to your health and happiness!

Hi Joy, I’m allergic to maple syrup. What can I use instead?
You can omit it in this recipe since it’s not much. For other recipes, try monk fruit, stevia, or raw honey as substitutes.
Hi Joy, can you recommend a good gluten-free bread option? Also, where can I find dried wild mushrooms?
Hi Melissa! Thornbury is a great gluten-free option, usually found in the freezer section at health food stores. You can also find dried wild mushrooms online at Forbes Wild Foods or at natural grocers.
Yes, you can never have too many mushrooms—they’re especially good for breast health. Thanks, Joy, this sounds amazing! I also like the Carbonaught gluten-free multigrain bread, which is low-carb. You can find it at health food stores and Loblaws/Independent. I’m hoping to start baking my own bread again in 2022.
Happy Friday, Joy!
This dish has become a breakfast favorite in our house—thanks, Joy! We add bok choy or spinach for an extra green touch, which is delicious.
I love the idea of adding greens, great suggestion! Thrilled to hear you enjoy it, Nancy!
