We’ve enjoyed quite a few picnics this summer! It’s been the perfect way to escape from our condo and spend a fun weekend outdoors, enjoying the weather and each other’s company. Whether we’re packing a picnic basket for a bike ride along the waterfront or taking a road trip, picnics are a great family-friendly activity. Walker, Vienna, and I love to sit back, relax, and savor some delicious easy-to-pack food!
We just returned from a week-long getaway to Manitoulin Island in Northern Ontario. We had lots of hiking adventures and, of course, picnics. If you’ve ever traveled with a 4-year-old, you know that snacks are essential, especially with Vienna, who loves good food just like her parents and always seems to be eating! We packed a variety of snacks and lunch options to enjoy as we wandered through the lush green forests, with glimpses of Lake Huron in the distance.
If you’ve followed Joyous Health for a while, you know Walker and Vienna love sandwiches! I think they would happily survive on sandwiches, pizza, and pasta if they could! So, I thought it would be fun to create some new picnic-friendly sandwich recipes. I hope these ideas inspire you to mix up your sandwich routine and head out for a picnic!
In the McJordan household, when we make sandwiches, we often choose Silver Hills Sprouted Bread. **Falafel Sandwich**
First up is a Falafel Sandwich. You can use store-bought falafel or my Baked Falafel recipe. This sandwich is sure to keep you satisfied for hours, thanks to the protein and fiber-rich chickpeas and chickpea flour! I also added some quick pickled onions for a bit of zing and a tahini drizzle for creaminess.

This sandwich pairs nicely with the Cucumber Beet Hummus Sandwich!
**Cucumber Cashew Cheese Sandwich**
For this sandwich, I drew inspiration from my childhood favorite—Cucumber Cream Cheese Sandwich. It was a tea-party staple! For this picnic-ready version, I swapped traditional cream cheese for cashew cheese. You can buy cashew cheese or make your own. It’s a delightful dairy-free option, filled with fresh herbs and tangy from fermentation. I also added my famous Beet Cashew Dip (just look at that beautiful color), but any dip or hummus will work!
