This year, Walker and I have promised ourselves to return to creating more recipe content to share with you. We spend a lot of time cooking, so it just makes sense to show you what we’re whipping up. I really have no excuses, especially since I have an in-house photographer (if you didn’t know, Walker is a talented photographer and videographer).
I wanted to keep things simple with a classic chicken noodle soup using just celery, carrots, and onions as the veggies, along with some straightforward seasoning. These ingredients are full of flavor, so don’t worry—simple doesn’t mean boring!
I used homemade chicken stock from when we had Lemon Garlic Roast Chicken for dinner the other week. Don’t throw away that carcass! Turn it into nourishing broth or use it as a base for this soup. If you prefer to buy chicken stock, make sure it has no added sodium, MSG, or yeast extract. For the best quality, try getting house-made stock from your local butcher or health food store.
This soup is perfectly balanced and can be a meal on its own with plenty of protein. However, I highly recommend pairing it with a loaf of the Best Ever Paleo Bread and some cauliflower hummus from The Joyous Cookbook!
When I serve myself a bowl, I like to add a bit more black pepper for extra heat. I keep it milder in the pot since Vienna finds it “too spicy”—just a little tip if you want to kick it up a notch!
