JUMP TO RECIPE

Let’s break free from the usual lunch routine with these delicious, nourishing sandwich recipes. At home, we call them “sammies” because they’re super easy to make and packed with flavor. Your child will be thrilled to find one of these beauties in their lunchbox instead of a smelly hard-boiled egg! And if you’re an adult reading this, I hope these ideas bring some inspiration to your lunches too.

All my sandwich recipes feature Silver Hills sprouted bread products. We’ve been buying this bread for years because it’s delicious, fluffy, and sprouted! A sprouted grain is easier to digest, with pre-digested gluten and broken-down starches. Plus, it’s packed with fiber that nourishes the gut microbiome and won’t cause tummy troubles for anyone in the family. You can find more about the benefits of sprouted grains here, along with three tasty recipes using Silver Hills’ sprouted bread.

Chickpea Apple Slaw Sandwich
This Chickpea Apple Slaw Sandwich is so tasty you’ll find yourself snacking on it as you prepare it! Since it’s entirely raw, there’s no baking or cooking needed—just toast some Silver Hills bread. Chickpeas add protein, fiber, and essential minerals like iron and potassium, helping keep hunger at bay longer. Makes 2 sandwiches.

Glazed Maple Tamari Tempeh Sandwich
Up next is a delectable tempeh sandwich, which offers a hearty protein source. Tempeh is fermented, making it easy to digest. While tempeh alone is mild in taste, this marinade infuses it with delicious flavors. I suggest baking the tempeh over the weekend to have it ready for quick weekday meals. Making 2 sandwiches, you’ll likely have leftover tempeh for another sammie later.

Sunflower Butter, Hemp Hearts, and Strawberry Bagel
The final sammie is simple and perfect for quick lunches, snacks, or breakfasts. School allergies mean nuts are out, so I used sunflower butter—it tastes like peanut butter, so everyone enjoys it! Hemp hearts add extra protein and fiber, while strawberries bring a touch of sweetness. We used Silver Hills sprouted bagels, ensuring Vienna gets wholesome, easy-to-digest food she’ll love. Their Cinnamon Raisin bagels are also a hit. Makes 2 bagels.

There you go—three sandwiches to rejuvenate your back-to-school lunches. Whether you’re stuck in a lunch rut or just seeking new ideas, enjoy the inspiration!

Happy back to school!
