This paleo bread, which is both gluten-free and grain-free, is packed with wholesome flours, making it ideal for a hearty sandwich or simple peanut butter and jelly. At my place, almond butter with smashed raspberries or sliced apple is a favorite choice!
I regularly use almond flour, coconut flour, and arrowroot flour in my baking, so I always keep them in stock. They give the bread a moist and fluffy texture that tastes delicious.
I created this recipe for an online program, and because it was so popular, I just had to share it on my blog and YouTube channel. It’s rich in fiber, packed with phytonutrients, antioxidants, healthy fats, and protein. It even helps balance blood sugar and is truly satisfying!
If you’re looking to make this bread without eggs, chia or flax eggs might work, but eggs are crucial for this recipe’s texture and flavor.

This bread freezes well. I usually slice it then store it in silicone bags, freezing it for later use. When I want a piece, I toast a slice straight from the freezer, keeping it fresh, and then slather on almond butter or make avocado toast.

Can’t wait to bake now with almond and arrowroot flour. 1) Why coconut flour? Can it be left out? 2) Is only baking soda okay instead of powder? 3) Almond meal or blanched almond flour?
Don’t skip coconut flour—it adds texture and absorbs moisture. Using both baking powder and soda is important for rise and expansion. Either almond flour version works!
