I absolutely love sweet potatoes (have you noticed?). Stuffing them with delicious ingredients takes them to a new level! The best part is that all three of these stuffed sweet potato recipes are entirely plant-based, helping you increase your veggie intake.
Eating more plant-based foods is a great way to support digestive health and reduce the risk of chronic diseases like diabetes and heart disease. You’ll not only be eating more veggies but also getting plenty of fiber for gut health, plant-based protein to keep you satisfied, and complex carbs for lasting energy. One stuffed sweet potato can be quite filling, potentially serving as a whole meal depending on your appetite!
The first variation is stuffed with avocado and black beans, offering anti-inflammatory fats, plus iron and plant-based protein. The dressing on top really brings everything together. The tahini sauce is creamy and flavorful, yet dairy-free.
This stuffed sweet potato is best enjoyed right away since avocados tend to brown quickly, so make sure to savor it fresh!
The second version is the simplest to prepare, as it comes from a frozen ready-made meal! I have to admit, while I usually prepare everything from scratch, I am a big fan of Wholly Veggie frozen meals for a quick and healthy option.
I used one package of Wholly Veggie Sweet & Spicy Chickpeas to fill the potato. It’s full of plant-based, allergen-free goodness, without any unwanted additives. For a finishing touch, I added diced avocado and fresh cilantro.
The final sweet potato is the most flavorful, thanks to a maple tamari marinade reminiscent of my Maple Tamari Tempeh Strips. Taking inspiration from Asian cuisine, I included sea veggies (nori) and sesame seeds— a drizzle of toasted sesame oil would be a lovely addition!
I recommend baking the sweet potatoes when you’ve got an hour to spare, so they become nice and soft. Prepare the toppings right before serving.
True story: As I wrap up writing this, it’s the end of my day (post-dinner), and just thinking about these makes me hungry again!
